Job Description

Carbon Copy is a brewery & winery located in West Philly. We serve a variety of house brewed beer, house made wine, cocktails from PA based spirits, and N/A beverages alongside our pizza focused food menu. We opened the West Philly brewery in December of 2022 and recently opened a second location in Port Richmond. We are in the process of opening our third location in Bella Vista. We are looking for someone to manage, oversee, and lead all Back of House operations and staff at our West Philly location. The role of the chef/kitchen manager is to hire, train, direct, support, and supervise all Back of House staff, maintain and execute current recipes to a high standard, create special recipes seasonally as well as maintain our "Pizza of the Week" special through previous recipes and/or creating new ones, work with the owners to adjust the menu as needed, manage all food operations, work with the Front of House manager to ensure service runs smoothly, writing the prep list, properly delegating tasks, and administrative work like keeping inventory, ordering, scheduling, and POS menu editing. The ideal candidate would have a positive attitude, an interest in pizza (beer and wine also a plus), leading a team, and maintain communication with the owners, other managers, and staff.

Chef/Kitchen Manager Job Responsibilities:
  • Collaborates with the owners to maintain the menu with current recipes and develop new dishes 
  • Produces high-quality items considering both appearance and taste.
  • Oversees and supervises the kitchen staff on a daily basis
  • Hires new staff as needed
  • Actively works on the line to support any and all stations when necessary. 
  • Inventory, supply management and ordering. 
  • Keeps stations clean and complies with food safety standards.
  • Monitors and maintains kitchen equipment.
  • Maintain kitchen Cost of Goods Sold and spending as dictated by the owners
  • Writing daily prep lists for all scheduled staff. 
  • Train cooks, dishwashers, and other kitchen employees 
  • Schedule writing and labor management as dictated by. 
  • Maintain sanitation and safety standards in all kitchen areas. 

Work Hours and Benefits:

  • This is a salaried position. Salary based on experience. 
  • Nights and weekend availability are a must.
